Vegetable kurma type 1

When i got bored with usual kurma I browsed net and finally found this recipe. Quite different from ordinary kuruma and I am sure you will like this.

Ingredients:

To Grind:


  • Coconut gratings -1 cup
  • Mint leaves -1 hand full
  • Corriander -1 handfull
  • Green chilli -1
  • Cashewnut  -5-6 nos
  • Garlic -3 cloves
  • Coriander powder  -2 tsp  
  • Red chilli powder -1&1/2 tsp
  • Fennel seeds -1/2 tsp
  • Garam Masala -1/2 tsp

For gravy:


  • Oil -7 tsp
  • Turmeric powder  -1/2 tsp
  • Cauliflower -1/2 cup
  • Potato -1/2 cup
  • Carrot -1/2 cup
  • Beans -1/2 cup
  • Peas -1/2 cup
  • Tomato -1 cup
  • Cabbage -1 cup
  • Onion -1 cup
  • Curry leaves -1 spring
  • Salt -To taste

Method:

  • Grind all the ingredients given under 'to grind'.
  • Pressure cook all the vegetables except onion and tomato by adding turmeric powder and salt.
  • Mash the cooked vegetables with a laddle.
  • Now in a pan add onion,curry leaves saute till onion turns transparent and then add tomato.
  • Cook till tomato turns mushy.
  • Now add the grinded paste.Allow it to boil.
  • Now add mashed vegetables with the water in which it got cooked.
  • Add extra water if needed.Check for salt.Finally add fresh corriander.
  • Serve hot with chappathi.













Notes:

  • I blanched cauliflower with turmeric powder and salt before pressure cooking it.
