Avial
Serves-4
Avial is one of my favourites,either having it for lunch or for adai.One of the best dishes in kerala cuisine.
Ingredients:
- Mixed vegetables -3 cups
- Green chilli-2(slit)
- Curd-1/4 cup
- Turmeric powder-1/4 tsp
- Salt -To taste
To grind:
- Coconut gratings -3/4 cup
- Green chilli -2 nos
- Jeera/Cumin- 1 tsp
To temper:
- Coconut oil -2 tbsp
- Mustard seeds -1/2 tsp
- Curry leaves -1 spring
Method:
- Cut vegetables(carrot,beans,plantain,peas,drumstick,potato,elephant yam)lengthwise.
- Boil it with salt,green chilli and turmeric powder.(Add water as required).
- Grind all the ingredients given under 'to grind'.
- Now add the grounded paste to the cooked vegetables.
- Let it boil for few minutes.
- Now temper it with items given under 'to temper'.
- Finally add curd and turn off the gas.
- Serve with rice or adai.
Notes:
- Adding turmeric is optional.
- Some don't like curd so you can add it at the time of serving.
