Avial



Serves-4

Avial is one of my favourites,either having it for lunch or for adai.One of the best dishes in kerala cuisine.

Ingredients:

  • Mixed vegetables -3 cups
  • Green chilli-2(slit)
  • Curd-1/4 cup
  • Turmeric powder-1/4 tsp
  • Salt -To taste

To grind:

  • Coconut gratings -3/4 cup
  • Green chilli -2 nos
  • Jeera/Cumin- 1 tsp

To temper:

  • Coconut oil -2 tbsp
  • Mustard seeds -1/2 tsp
  • Curry leaves -1 spring

Method:

  • Cut vegetables(carrot,beans,plantain,peas,drumstick,potato,elephant yam)lengthwise.
  • Boil it with salt,green chilli and turmeric powder.(Add water as required).
  • Grind all the ingredients given under 'to grind'.
  • Now add the grounded paste to the cooked vegetables.
  • Let it boil for few minutes.
  • Now temper it with items given under 'to temper'.
  • Finally add curd and turn off the gas.
  • Serve with rice or adai.








Notes:

  • Adding turmeric is optional.
  • Some don't like curd so you can add it at the time of serving.
