Capsicum rice

This dish will be a treat for capsicum lovers.Whenever I have lots of capsicum at home I by default make this.Perfect for lunch box also,This has no ginger garlic in it.

Ingredients:


  • Oil -2 tsp
  • Jeera - 1/2 tsp
  • Cinnamon -A small stick
  • Basmati rice -1 cup
  • Water -1&1/2 cup
  • Onion -1 large
  • Tomato -1 
  • Green chilli -2
  • Mixed vegetables -1 cup
  • Capsicum -1 cup
  • Turmeric powder -1/4 tsp
  • Red chilli powder -1/2 tsp
  • Coriander leaves -2 tbsp
  • Salt -To taste

Method:


  • Soak basmati rice for 30 mins.
  • In a pressure cooker add oil,jeera.
  • Then add onion and saute for 2 mins.Then add tomato.
  • Now add mixed veggies and saute for 4 mins.then add green chilli followed by spices.
  • Saute for few mins and then add capsicum.Saute for 2 more mins.
  • Finally add water,check for salt and add soaked basmati rice.Add coriander leaves.
  • Pressure cook for 2-3 whistles.











Notes:

  • I used carrot,potato,beans,peas and cauliflower.You can add veggies of your own choice.
