Capsicum rice
Serves-3
This dish will be a treat for capsicum lovers.Whenever I have lots of capsicum at home I by default make this.Perfect for lunch box also,This has no ginger garlic in it.
Ingredients:
- Oil -2 tsp
- Jeera - 1/2 tsp
- Cinnamon -A small stick
- Basmati rice -1 cup
- Water -1&1/2 cup
- Onion -1 large
- Tomato -1
- Green chilli -2
- Mixed vegetables -1 cup
- Capsicum -1 cup
- Turmeric powder -1/4 tsp
- Red chilli powder -1/2 tsp
- Coriander leaves -2 tbsp
- Salt -To taste
Method:
- Soak basmati rice for 30 mins.
- In a pressure cooker add oil,jeera.
- Then add onion and saute for 2 mins.Then add tomato.
- Now add mixed veggies and saute for 4 mins.then add green chilli followed by spices.
- Saute for few mins and then add capsicum.Saute for 2 more mins.
- Finally add water,check for salt and add soaked basmati rice.Add coriander leaves.
- Pressure cook for 2-3 whistles.
Notes:
- I used carrot,potato,beans,peas and cauliflower.You can add veggies of your own choice.
