Tomato Soup

I still remember the first time I had tomato soup.It was during my uncle's wedding reception.Soup itself was completely new to me.I had one bowl of soup and  couldn't stop having it.I totally had 
4-5 bowls.From that time on wards I got addicted to soup.I still crave for tomato soup.When I got the recipe I immediately tried it.Though it din't match hotel ones taste it was still good and refreshing.

Ingredients:

  • Tomato -4 nos
  • Beetroot -A small piece
  • Oil -1 tbsp
  • Bay leaf -1
  • Garlic -4 cloves
  • Corn flour -1/2 tsp
  • Water -2cups
  • Pepper powder -To taste
  • Fresh Cream -2 tbsp
  • Sugar -1/4 tsp
  • Salt -To taste

Method:

  • In a cooker add oil,bay leaf and garlic cloves.
  • Then add tomatoes and beetroot.
  • Add two cups of water and pressure cook for 2-3 whistles.
  • Peel the skin from tomatoes,Remove the bay leaf.
  • Now blend everything in a mixie.
  • Strain the soup add 1/2 cup of water if it is necessary, Now again add the bay leaf,salt and let it boil.
  • Dilute cornflour with little water.
  • Add it to the soup.Add sugar and stir.
  • Finally add pepper powder and serve hot.











Notes:

  • Adding beetroot is optional.It gives good colour to the soup.
  • Add only tiny piece of beetroot as adding more beetroot,soup will become pink in colour.
  • You can add fresh coriander leaves if you want.
  • I dint add cream, if you are  adding add it finally.
  • Adding sugar balances the sourness of tomato.
  • If you want you can add a pinch of aji no moto.But not advisable for health.
