Tomato Soup

I still remember the first time I had tomato soup.It was during my uncle's wedding reception.Soup itself was completely new to me.I had one bowl of soup and couldn't stop having it.I totally had
4-5 bowls.From that time on wards I got addicted to soup.I still crave for tomato soup.When I got the recipe I immediately tried it.Though it din't match hotel ones taste it was still good and refreshing.
Ingredients:
- Tomato -4 nos
- Beetroot -A small piece
- Oil -1 tbsp
- Bay leaf -1
- Garlic -4 cloves
- Corn flour -1/2 tsp
- Water -2cups
- Pepper powder -To taste
- Fresh Cream -2 tbsp
- Sugar -1/4 tsp
- Salt -To taste
Method:
- In a cooker add oil,bay leaf and garlic cloves.
- Then add tomatoes and beetroot.
- Add two cups of water and pressure cook for 2-3 whistles.
- Peel the skin from tomatoes,Remove the bay leaf.
- Now blend everything in a mixie.
- Strain the soup add 1/2 cup of water if it is necessary, Now again add the bay leaf,salt and let it boil.
- Dilute cornflour with little water.
- Add it to the soup.Add sugar and stir.
- Finally add pepper powder and serve hot.
Notes:
- Adding beetroot is optional.It gives good colour to the soup.
- Add only tiny piece of beetroot as adding more beetroot,soup will become pink in colour.
- You can add fresh coriander leaves if you want.
- I dint add cream, if you are adding add it finally.
- Adding sugar balances the sourness of tomato.
- If you want you can add a pinch of aji no moto.But not advisable for health.
