Potato kurma



Serves-4

Name any type of veg kurma I love it.The best part in kurma is the potatoes in it.A kurma with only potatoes is definitely a treat.A perfect match for poori and chappathi.

Ingredients:


  • Potato -2 medium
  • Onion -1 large
  • Tomato -2
  • Coriander -2 tbsp
  • Curry leaves -1 spring
  • Cashew nuts -3-4
  • Curd -1/2 cup
  • Red chilli powder -1 tsp
  • Turmeric powder -1/4 tsp
  • Ginger garlic paste -1/2 tsp
  • Salt -To taste
  • Sugar -A pinch

To grind:


  • Coconut -1/2 cup
  • Oil/ghee -2 tbsp
  • Cinnamon -A small piece
  • Cardamom -2
  • Cloves -2
  • Channa dhal -1 tbsp

Method:

  • Cut the potatoes,boil them and keep it aside.
  • In a pan add oil,Whole garam masala followed by channa dhal.
  • Add coconut scrappings fry for few seconds and switch off the flame.
  • Grind it to a fine paste.Keep aside.
  • Now in a pan add oil,cashews followed by finely chopped onion,saute for 2 mins and then add Ginger garlic paste and saute till raw smell disappears.Add green chilli and curry leaves.
  • Now add tomato followed by spice powders.
  • Add grinded paste to this masala.
  • Add water as needed and add salt.Let it boil.
  • Beat the Curd well and add it.And allow it to boil for 3 more mins.
  • Now add the potatoes and let it boil for 3-4 mins.
  • Finally add chopped coriander leaves,sugar and turn off the gas.
  • Serve with hot poori/chappathi.


















Notes:

  • I wanted the consistency to be like gravy type so added less water .
  • You can add water as per your wish.
  • Adding cashews and sugar is completely optional.
