Carrot poriyal
Serves -3
I never eat carrots when they are made as poriyal.I prefer to have it raw.But after getting married I got used to this as my husband eats it.A very healthy and tasty poriyal.
Ingredients:
- Carrots -4 medium size
- Coconut scrapings -1/4 cup
- Turmeric powder -1/4 tsp
- Water -1 cup
- Moong dhal -1 tbsp
- Salt -To taste
- Sugar -A pinch
To temper:
- Oil -2 tsp
- Mustard seeds -1/4 tsp
- Urad dhal -1/2 tsp
- Red chilli -1
- Curry leaves -Few
- Asafoetida -Few pinches
Method:
- Wash the carrots and scrap/peel its skin.Cut into pieces.
- In a pan add oil and temper with items given under 'to temper'.
- Now add chopped carrots,moong dhal,turmeric powder,salt and sugar. Mix well.
- Close the lid and cook in medium flame.
- When it is cooked add coconut scrapings.
Notes:
- You can avoid sugar if you don't prefer.
