Carrot poriyal




Serves -3

I never eat carrots when they are made as poriyal.I prefer to have it raw.But after getting married I got used to this as my husband eats it.A very healthy and tasty poriyal.

Ingredients:

  • Carrots -4 medium size
  • Coconut scrapings -1/4 cup
  • Turmeric powder -1/4 tsp
  • Water -1 cup
  • Moong dhal -1 tbsp
  • Salt -To taste
  • Sugar -A pinch

To temper:

  • Oil -2 tsp
  • Mustard seeds -1/4 tsp
  • Urad dhal -1/2 tsp
  • Red chilli -1 
  • Curry leaves -Few
  • Asafoetida -Few pinches

Method:

  • Wash the carrots and scrap/peel its skin.Cut into pieces.
  • In a pan add oil and temper with items given under 'to temper'.
  • Now add chopped carrots,moong dhal,turmeric powder,salt and sugar. Mix well.
  • Close the lid and cook in medium flame.
  • When it is cooked add coconut scrapings.






Notes:

  • You can avoid sugar if you don't prefer.
