Coconut milk vegetable biryani

Coconut milk by itself is very tasty and has a soothing effect,Biryani made out of it is also very tasty and stands out unique Try this and enjoy.
Ingredients:
- Coconut milk powder -3 tbsp
- Luke warm water -1&1/4 cup
- Basmati rice -1 cup
- Mixed vegetables -1cup
- Mint leaves - 2 tbsp
- Onion -1 large
- Green chilli -2-3
- Oil -2-3 tbsp
- Cinnamon -1 small piece
- Cloves -2
- Cardamom -1
- Bay leaf -1
- Red chilli powder -1 tsp
- Garam masala -1/4 tsp
- Salt -To taste
Method:
- Soak basmati rice for 30 mins.
- In a pan add oil,and whole spices.Then add sliced onions.
- Saute for 2 mins.Now add mixed vegetables.(I added carrot,beans,peas,sweet corn,potato).
- Add salt.red chilli powder,and garam masala.
- Mix 3 tbsp of coconut milk powder in 1 cup of luke warm water.
- Add coconut milk to veggies.Then add soaked basmati rice.Add extra water if necessary.
- Transfer it to a vessel and pressure cook it for 3 whistles.
- Serve hot with onion/cucumber raita.
Notes:
- I added frozen vegetables so I added less water.
- If you are adding fresh veggies cook till the vegetables turn soft and then add coconut milk.
- Or add 1/4 cup more water for the vegetables to cook.
- I used rice cooker.
- If you want you can add fresh coconut milk also.If so use 1/2 a coconut to get milk.
- Let the first milk and second milk together add up to 1&1/4 cup.
- I din't add ginger garlic paste if you want add 1/2 tsp after adding onions.
