Beetroot poriyal
Serves -3
This is one of my favourite poriyal its sweet nature and colour is gorgeous.Of course healthy too.
Ingredients:
- Beetroot -2 medium size
- Coconut -Less than 1/4 cup
- Water -1 cup
- Salt -To taste
- Sugar -1/4 tsp
To temper:
- Oil -1 tsp
- Urad dhal -1/4 tsp
- Red chilli -1
- Asafoetida -Few pinches
Method:
- Cut beetroot and pressure cook it with little water(mostly not needed).
- In a pan temper it with items given under 'to temper'.
- Add the cooked beetroot,salt and sugar.Mix well.
- Finally add coconut scrapings and turn off the gas.
Notes:
- This is a quick version.You can avoid pressure cooking and directly add chopped beetroot and cook.
- You can avoid coconut.But it gives good taste and look.
