Beetroot poriyal



Serves -3

This is one of my favourite poriyal its sweet nature and colour is gorgeous.Of course healthy too.

Ingredients:

  • Beetroot -2 medium size
  • Coconut -Less than 1/4 cup
  • Water -1 cup
  • Salt -To taste
  • Sugar -1/4 tsp

To temper:

  • Oil -1 tsp
  • Urad dhal -1/4 tsp
  • Red chilli -1
  • Asafoetida -Few pinches

Method:

  • Cut beetroot and pressure cook it with little water(mostly not needed).
  • In a pan temper it with items given under 'to temper'.
  • Add the cooked beetroot,salt and sugar.Mix well.
  • Finally add coconut scrapings and turn off the gas.










Notes:

  • This is a quick version.You can avoid pressure cooking and directly add chopped beetroot and cook.
  • You can avoid coconut.But it gives good taste and look.
