Pineapple rasam
Serves-3
Ingredients:
- Pineapple -2 large pieces
- Toor dhal -1/4 cup
- Rasam powder -2 tsp
- Tamrind - size of a lemon
- Turmeric powder -1/2 tsp
- Pineapple essence - Few drops
- Salt -To taste
- Coriander - For garnish
- Curry leaves - 1 spring
To temper:
- Ghee -2 tsp
- Mustard seeds -1/2 tsp
- Asafoetida -1/4 tsp
- Red chilli -1 no.
Method:
- Pressure cook toor dhal with 2 cups of water and mash it.
- Soak tamrind and extract 1 cup of tamrind water.
- Make puree with one slice of pineapple and keep ready.
- Now in a vessel add tamrind extract,turmeric powder,salt,curry leaves,pineapple puree, Pineapple cut into small pieces,rasam powder and allow the mixture to boil for 5 mins.
- Add 2-3 drops of pineapple essence.
- Now add toor dhal mixture and boil it.
- Finally add fresh coriander and switch off the flame.
- Now temper it with items given under 'to temper'.
- Serve with steaming rice and pappad.
Notes:
- Adding pineapple essence is optional.
- Red chilli in tempering is also optional.
